Turbot is a flatfish with a thick, rounded body and firm white flesh that holds its shape better than most flatfish. The skin carries fine dark spots and is usually left on during cooking to protect the meat. The flavour is mild and clean, with none of the muddiness that puts people off cheaper flatfish. It is a forgiving fish for the oven and the pan: steam it whole with ginger, braise it in a light sauce, or fry it in butter until the edges crisp.
